Finding the perfect home takes time. Eleven years ago, Michelle Kristof opened Living Green, a Tavares business dedicated to her passion for healthy foods.
Fast forward to the present and the business has transformed into Living Green Cafe and relocated to Triangle Center in Eustis. With fresh organic ingredients in its sandwiches, wraps, salads, entrees and smoothies, the small cafe boasts some of the freshest and healthiest offerings in the area.
Although not purely vegetarian, Living Green Cafe specializes in plant-based dishes and offers many gluten-free and raw options. For example, Kristof makes creative use of cashews and walnuts for delicious variations on sauces, cheeses and fillings.
Our favorites are the Asian chicken lettuce wraps and the vegetarian lasagna, but according to Kristof, the tostadas, tacos and kale chips are also big hits with customers.
Not to be overlooked are Living Green's homemade desserts and smoothies. The treats are absent of cane sugar and other processed sweeteners which can make diners dubious at first. However, the results are surprisingly delicious. Kristof masterfully substitutes dates, coconut nectar and maple syrup for sugar. The peanut butter cup cookie is infinitely more delicious than its Reese’s namesake.
An Ohio native, Kristof has lived in Astatula for the last 20 years. Creating healthy food has been her passion since her children were born. Now a grandmother, Kristof has found the time to master her flavorful raw food recipes. Devotees of raw food nutrition believe that leaving processed food behind and eating mostly unprocessed, organic, plant-based foods has many health benefits, including weight loss and reduced inflammation.
"I feel good about what I'm doing, said Kristof. “It is my passion and my purpose in life."
Living Green Cafe features a handful of tables for diners and does significant takeout business. Customers can call in their orders at (352) 602-4956. The restaurant also offers beer and wine and can cater small gatherings. Located at one of the major crossroads in north Lake County, U.S. 441 and C.R. 19A, the cafe's new home in Triangle Center is well situated to satisfy health-conscious diners from Eustis, Mount Dora and Tavares.
The cafe is open Monday through Friday 10 a.m. to 4 p.m. Beginning in November, the cafe will expand its hours to include Saturdays. Living Green is located at 353 Plaza Drive in Eustis
